Casena Mongerrati’s restaurant can offer a delightful range of tasty, traditional dishes. It has the knowledge and experience as to how best to combine traditional products which the area provides in abundance, often from less than 1km away, with the chef’s talent for experimenting with results that will captivate the taste-buds. Salted fresh Ricotta, pecorino cheeses, (tuma, primosale, pirmintio, caciocavallo), goats’ milk and many other typical cheeses. Then there are the cured meats and sausages that have been expertly made with the meat from local animals and which have been dried in accordance with old traditions but with modern implements; home-made sourdough, fresh bread, vegetables that have been grown right nearby the farmhouse or have been sourced from within the Madonie Park; lamb, pork and beef that has come from farms in the area, porcini and Amanita Caesarea mushrooms which grow abundantly in the woods of the surrounding area at different times of the year, Basilischi mushrooms, which are renowned for their scent and taste and are only found in one particular area of the Madonie Regional Park.
